Zucchini Casserole

A family standby

  • 1 onion, sliced in rings
  • 1 garlic clove, peeled and diced finely
  • 1 large can tomatoes
  • 1 t. oregano
  • 1 T. vinegar
  • salt and pepper

Simmer above for 15 minutes or so.

Slice 2 lbs. zucchini. Lay in a buttered baking dish. Pour sauce over.

Bake for 1 hour at 375 degrees.

Sprinkle parmesan on top for last 15 minutes.
