The Last Caesar Salad Recipe That You’ll Ever Need

I’ve made this several times lately and it really is super good and super easy. Make home made croutons and use lots of parmesan when tossing the salad.

Ingredients:

  • 2 anchovy fillets (PJH: I use anchovy paste – one good squirt – about 1 tsp)
  • 2 cloves garlic, chopped, or to taste
  • 1 cup mayonnaise
  • ⅓ cup grated Parmesan cheese
  • ¼ cup half-and-half
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce

Combine anchovy fillets with garlic in a food processor and pulse several times to form a paste. Process mayonnaise, Parmesan cheese, half-and-half, lemon juice, Dijon mustard, and Worcestershire sauce with anchovy mixture until dressing is creamy. Refrigerate for 1 hour or more before serving.

BLT

BLTs are always good.  But BLTs in the summertime are awesome.

Tomatoes are the most important part and the tomatoes from our garden were perfect.

Lettuce

We are growing lettuce for the first time ever and it’s growing great in this great spring we are having.  Not sure what kind of lettuce this is, I think I have it written down somewhere, but it has been very prolific and we have used it most every day for the past week.  We made a nice rice salad for today’s Memorial Day Picnic with it that was nice and tasty.  Recipe that I sort of followed is here:  Basmati Rice with Summer Vegetables.  Sorry no pix of salad, but here’s some pix of our lovely lettuce
